A Chopped Cheese (or chop cheese) is to New York what the Philly Cheesesteak is to Philly. It's the quintessential Bodega/Deli sandwich that was birthed decades ago in Harlem. It's basically a burger on a flat-top, that gets chopped up and cooked with onion and seasonings, topped with a bunch of cheese, and slid onto a toasted roll with some toppings. It's not fancy, but it is cheap, fast, and so delicious.
In honor of the New Year's ball drop this week, I thought the pizza version of the Chopped Cheese would be fun. Also because I was in New York last week and this is still all I can think about. I hope you love it!
