I always make this in Winter, specifically because it's one of the biggest fresh flavor bomb pizzas we make. I dip small pieces of chicken in a very light batter, and after it cooks crispy, I toss it with my scratch-made Thai peanut sauce. The peanut sauce is warm and nutty, but sweet and bright at the same time. A fresh carrot & red pepper slaw is kissed by a little lime and toasted sesame oil. Some cheese, sweet Thai chili sauce, and toasted peanuts finish it off. After forgetting about it last year, I'm very glad it's back briefly this Winter!
