Good food takes time, and these onions have to s l o o o w l y bubble away all day. Preparing this pizza takes a whole day from my life, but it's worth it. I add a little beef stock to the onions, resulting in a sweet and savory onion mixture that tastes like the fanciest French Onion Soup. It's topped with a little local swiss, mozz, and provolone, and some fresh thyme leaves. I add some French fried onions for a little 'je ne sais quoi.'
This one's fantastic as a party pizza where you cut it into 16 pieces for a super easy appetizer. It goes great with both wine and beer and cocktails. The whole trifecta. It also goes great with a movie and fuzzy socks.
