If you haven't yet gotten your mitts on some Birria Tacos from any number of taco shops around town, I want you to know I'm not mad. Just disappointed. Because Birria is having a moment. Super cheesy shredded beef tacos kinda fried in this chile-laced rendered beef fat, and served with a flavor bomb consomé for dunking. It's like a meaty quesadilla with a billion times the flavor. And it was just yearning to be a pizza. Yes. Yearning.
Seriously this is the best thing I've ever done with beef. When we first made this bad boy, I was stressing so much about trying to figure out a sauce for this pizza. But with the guidance of a couple sweet Mexican cooks, I was shown the true magic of Birria. Them meat juices. So the braised meat is the sauce. At first glance, it's meat and cheeses on a crust. But in your mouth, it's a 12-piece mariachi band.
The flavors here are warm but I do not think this is spicy. Mild-Med heat depending on your widdle tongue.
